I had a potluck with my horseback riding club on Friday. I made brownies to bring, but my bestie was leaving late from work and wasn’t going to have something to bring… so I made guacamole for her to bring!

I used my KitchenAid stand mixer for this because I don’t own a molcajete anymore. The avocados I used were fairly firm. If you are also sans molcajete and your avocados are extremely ripe, you may want to use a fork to mash them and stir in everything else with a spatula instead. That way they won’t get too mashed by the mixer. I also chopped up the tomatoes in the Vitamix.


4 avocados
3 medium tomatoes, diced
1 cup diced onion
2 cloves garlic, grated
1 tsp kosher salt
2 tsp cumin
¼ tsp cayenne
Juice from ½ lime


Cut avocados in half and remove pits. Scoop the avocado out of the shell using a spoon. Note: Be careful with the avocado + knife situation. For the love of everything, just leave them on the cutting board and don’t try to cut them while holding them, and don’t whack your knife into the pit while holding them either!

Mash avocados (see note above about my method). Stir in the remaining ingredients. Cover with plastic wrap pressed tightly against the guacamole with no air bubbles if not serving immediately.
