Broccoli Slaw

I made this broccoli slaw to go on fish tacos, but it also makes a good side dish. It’s easy to make a lot, so it would be a good make and take side for a potluck. This recipe uses Greek yogurt, which I used to hate, until my boyfriend made a corn salad using Greek yogurt. I still won’t eat Greek yogurt by itself, but I’ve found it does make some tasty recipes! This also uses a package of broccoli slaw mix, but you could shred your own broccoli, carrots, and purple cabbage instead.

Broccoli Slaw

This tangy broccoli slaw made with Greek yogurt is full of flavor

Ingredients

  • 1 package broccoli slaw 12 oz
  • 7 oz plain Greek yogurt
  • 2 tbsp white vinegar
  • 2 cloves garlic minced or grated
  • 1 tsp dried cilantro
  • kosher salt to taste

Instructions

  • Whisk together Greek yogurt, vinegar, garlic, cilantro, and salt. Taste and determine if more salt is needed, or if you think it needs more cilantro or garlic. If it tastes too acidic or tangy, try adding ½ tsp sugar.
  • Pour the yogurt mixture over the slaw in a large bowl. Stir using a spatula until the slaw mix is well-coated. Refrigerate until serving.
