Mango Salsa

My boyfriend went on a fishing trip last weekend and caught a ton of Mahi Mahi. I made this mango salsa to go with some of the grilled fish. Later in the week, I used it on tempura Mahi Mahi sushi. It’s also a good snack with tortilla chips. You could also put avocado in it, which is what my aunt did when she made it (she also used a little less bell pepper than I did).

Mango Salsa

Ingredients

  • 1 mango peeled and diced
  • ¼ cup diced onion
  • ¼ red bell pepper diced
  • 3 cloves garlic grated or minced
  • 1 tsp dried parsley
  • Juice from 1 lime
  • Pinch kosher salt kosher
  • Dash pepper

Instructions

  • Combine all ingredients. If possible, refrigerate about 20-30 minutes before serving to let the flavors combine.
