I had a potluck with my horseback riding club on Friday. I made brownies to bring, but my bestie was leaving late from work and wasn’t going to have something to bring… so I made guacamole for her to bring!

I used my KitchenAid stand mixer for this because I don’t own a molcajete anymore. The avocados I used were fairly firm. If you are also sans molcajete and your avocados are extremely ripe, you may want to use a fork to mash them and stir in everything else with a spatula instead. That way they won’t get too mashed by the mixer. I also chopped up the tomatoes in the Vitamix.
Guacamole
Ingredients
- 4 avocados
- 3 tomatoes diced
- 1 cup diced onion
- 2 cloves garlic grated
- 1 tsp kosher salt
- 2 tsp ground cumin
- ¼ tsp cayenne
- Juice from ½ lime
Instructions
- Cut avocados in half and remove pits. Scoop the avocado out of the shell using a spoon. (See notes below for important avocado cutting safety information)
- Mash avocados (I just used my KitchenAid stand mixer with the flat beater).
- Stir in the remaining ingredients. Cover with plastic wrap pressed tightly against the guacamole with no air bubbles if not serving immediately, and transfer to refrigerator.
